Tomato - 1 medium cubed
Capsicum - 1 medium cubed
Ginger&Garlic paste - 1 tsp
Green chillies - 2 nos
Tomato ketchup - 2 tbsp

Turmeric powder - A generous pinch
Red chillie powder - 3/4 tsp
Pav bhaji masala - 1 tsp
Salt req - According to taste
Oil - 1/2 tbsp
Butter - 1 tsp
Water - 1/2 cup
Coriander leaves - 1 tbsp chopped
Tamatar Pulao Recipe Preparation Method (Tamatar Pulao Banane Ki Vidhi in Hindi):
In a wok pour oil , butter and add the onions and ginger garlic paste and fry till transculent.
Now add the chopped tomatos and fry for few min's.
After few min's add the chopped capsicum and all the dry powders and fry till the oil oozes out.
This is the time to add the tomato ketchup and fry it for few sec's.
Now add the water and allow it to boil.
Once the gravy starts boiling add the cooked rice.
Now mix the rice well and add the chopped coriander leaves and check for the salt and close with a lid and cook for 5 min's in lowest flame.
Now serve the tomato pulao with onion raitha.Can also serve with cucumber raitha too.

Soya Samosa Recipe in Hindi

Samosa Samagri Ingredients Below:
  • 8 – 10 medium potatoes, boiled, peeled, and diced
  • 3 tsp. oil
  • ½ tsp. cumin seeds
  • ½ tsp. hing (asafetida)
  • 1 medium onion, chopped
  • 3 – 4 green chilies, diced
  • salt to taste
  • 2 tsp. red chili powder
  • ¼ tsp. turmeric powder
  • 1 tsp. coriander powder
  • 1 tsp. cumin powder
  • 1 tsp. amchur (dried mango) powder
  • chopped cilantro
For the Samosas:
  • uncooked flour tortillas
  • a thick paste of flour and water to seal the edges
  • oil for deep-frying
To make the filling::
  1. Heat oil in a deep pan.  Add cumin seeds and hing.
  2. When the cumin seeds change color, add the onions and green chilies.
  3. Fry till the onions start turning slightly brown.  Now add the potatoes and all the dry powders – including salt.  Mix well.
  4. Let this cook for a few minutes.  Add the chopped cilantro.  Mix well and turn off the heat.  Set aside.
Soya Samosa Banane Ki Vidhi:
Heat oil for deep-frying in a kadai or pot with deep sides.
Take the flour tortillas. You can take a few at a time - I am showing one here to give you an idea.
Cut the flour tortillas into thirds.
Make a cone – as shown in the pictures below. Smear a little bit of the flour paste along the edges and press to seal.
Fill the cone with enough potato mixture, making sure that you can close it without the filling overflowing.
Again smear a little bit of the flour paste and seal the edges.
Once you have a few ready, put them gently into the hot oil and fry till they are golden brown, gently turning them to make sure that all sides are cooked.
Serve hot with cilantro chutney and chai

Konjam Tadka Recipe in Hindi

INGREDIENTS
Coconut grated – ½ coconut
Onion – 2
Tomato – 4
Green chilli- 2
Fennel seeds- 1 tablespoon
Pepper seeds – 1 tablespoon
Cinnamon stick – 1
Chilli powder- 1 tablespoon
Coriander powder- 1 tablespoon
Garam masala powder – 1 tablsepoon
Turmeric powder – pinch
Curry leaves- few
Salt to taste
Oil to cook
METHOD
Add 2 tablespoon of oil in a kadai and add curry leaves, fennel seeds, pepper and cinnamon stick and saute.
Now saute onion , then tomato and grated coconut with salt and turmeric powder one by one . Cover it for 10 mins and turn off the flame
when it cools, grind it to a fine paste with little water.
Now keep the kadai again and add 1 tablespoon of oil. Add curry leaves , and slit the green chillies and add. Pour the grinded curry paste into the kadai and add required amount of water for the right consistency.
Add chilli powder, coriander powder and garam masala powder.
Adjust salt and bring it to a boil by covering . it will take 5- 7 mins to simmer
Serve hot with parota, chapathi, and even with idli , dosa.

Masala Tea (Chai) Recipe in Hindi

Masala Tea (Chai) Recipe Ingredients:
Water – 3/4 cup
Milk – 1/2 cup
Tea powder – 1-1/4 teaspoon
Ginger – 1/4 inch size, freshly chopped and crushed
Cardamom – 2 pods
Clove – 1
Black pepper – 1-2 big size (optional)
Cinnamon stick – 1/4 inch size (optional)
Sugar – as desired or enough to make the tea sweet
Ghar Par Masala Chai Banane ki Vidhi:
Method #1: Crush all of the spices together and immediately mix it with water and milk in a saucepan and bring slowly to boil. Add tea leaves and turn up the heat when boiling. Add sugar. Swirl it around until it reaches the desired strength. Drain on a strainer into small glasses or tea cups.
Method #2: Boil the water. Stop the heat source. Add tea leaves and crushed spices to the boiling water in a tea decanter. Cover it for 3-4 minutes allowing the tea to brew. Drain into tea cups. Add milk and sugar to taste.
Method #3: Boil the water. Add tea leaves and reduce heat. Do not stop heat source. Add the crushed spices. Cook slowly for one or two minutes. Add milk and cook a little more. Drain and serve. Sugar as desired.

नींबु का रस - 1 1/2 बड़ा चम्मच

Nimbu Adrak Pani Method:
अब आप अदरक स्लाइस कर लें। 3  नींबु काट लें और  बीज निकाल लें। हमामदस्ते में अदरक और पुदीने के पत्ते डालकर कूटें और मिश्रण को कॉकटेल शेकर में डालें। अब इसी प्रकार 3-4 नींबु के टुकड़े भी कूटें और शेकर में डालें। बचे नींबु के टुकड़ों को निचोड़कर रस शेकर में डालें। फिर और 1 बड़ा चम्मच नींबु का रस, नमक और काला नमक डालें।  ¾ छोटा चम्मच कूटा जीरा भी शेकर में डालें। अब बर्फ के कुछ क्यूब और ¼ कप पानी डालें और अच्छी तरह हिलाएँ। छानकर सर्विंग ग्लासों में डालें और कुछ कूटे नींबु के टुकड़े भी डालें। पीने का सोडा डालकर ग्लास भर देंऔर  अच्छी तरह चलाएँ और तुरन्त पियें।

How To Make Chole Bhature Recipe in Hindi:

For the dry Masala:
1 tbsp cumin seeds (Jeera)
1 tbsp coriander seeds
5-6 cloves
3-4 small stick of cinnamon
2 dry red chilli
¼ tbsp oil
For the Chole with Paneer:
1 cup chick peas (Kabuli chana), soaked overnight
2 medium size onions
3 medium size tomatos
150 gm paneer
½ tbsp cumin seeds (jeera)
2 teaspoons amchur (dry mango powder)
1/4 teaspoon turmeric powder (haldi) 
3-4 piece of garlic
2 tbsp red chilli powder
3 tbsp oil
Salt to taste.

Chole With Paneer Recipe Preparation Method in Hindi:

Step 1: Peel and cut the onion. Cut the tomatoes in to big size and grind the onion, garlic with tomato into mixer. (also add ginger if you like that test)
Step 2: Pressure cook the chick peas with 1½ cup water with slat for 3 whistles until they are soft . Drain the extra water and keep aside.
Step 3: Heat the oil in pan, add the cumin seeds. When the seeds crackles, add the tomato-onion gravy.
Step 4: Sauté in medium flame for 5 minutes and add the turmeric and red chilli power in it.
Step 5: Add the cook chick peas and I cup water and mix well. Add the dry masala powder, amchur powder and salt and sauté for another 10 minutes.
Step 6: Add the paneer cubs and simmer for 5 minutes. Trun off the flame.
Step 7: Place it in serving bowl and decorate with onion and lemon round slices.
For the Bhature :
1 cup plain flour (maida)
½ cup curd
3 tbsp oil
Salt to taste
Oil for deep frying
Water for making dough if needed
For the bhature Preparation Method:
Step 1: Combine the flour, salt and oil and mix together.
Step 2: Add ½ cup fresh curd and water if necessary. Knead the dough very well till it is smooth.
Step 3: Cover with a wet muslin cloth otherwise any of the vessel and rest the dough for 2 hours.
Step 4: Divide the dough into small parts and roll out into circles of 125mm (5”) diameter.
Step 5: Deep fry in hot oil till the bhature puff up and both sides are golden brown.
Step 6: Serve hot with the chole-paneer.

300 gms (1½ cup) moong daal (yellow split green gram daal)
300 gms (1½ cup) sugar

Take a kadhai and dry roast the moong dal (you can use sona moong dal) on low flame until the colour changes to light brown / red.

Pan Pizza Preparation method (Pan pizza banana ki vidhi) Below:-
आब सबसे पहले मैदा को किसी बर्तन में छान कर निकाल लीजिये, ड्राई इन्सटेन्ट यीस्ट, ओलिब ओइल, नमक और चीनी डालकर मिलाइये. सारी चीजों को अच्छी तरह मिलाइये, और गुनगुने पानी की सहायता से चपाती जैसा आटा गूथिये, आटा लगाने के बाद, आटे को 7 - 8  मिनिट तक मसल कर एकदम चिकना होने तक गूंथिये। अब आटे को गूंथ कर, किसी प्याले में तेल लगाकर, 2 घंटे के लिये ढककर गरम जगह पर रख दीजिये, इतनी देर में आटा फूल कर दुगना हो जाता है.  आटा पिज्जा बनाने के लिये तैयार है। अब पिज्जा के लिये टापिंग तैयार कर लीजिये। अब शिमला मिर्च को काट कर बीज हटा दीजिये और लम्बाई में पतला पतला काट लीजिये. बेबी कार्न को गोल आधा सेमी. के टुकड़े काट लीजिये, और सब्जियों को तवे पर डालकर 2 मिनिट चम्मच की सहायता  से चलाते हुये हल्की सी नरम कर लीजिये। अब पिज्जा के लिये आधा आटा तोड़कर ले लीजिये और गोल लोई बनाइये, लोई को सूखे मैदा की सहायता से 10-12 इंच के व्यास में 1/2 सेमी. मोटा पिज्जा बेल कर तैयार कीजिये । अब गैस पर तवा या पैन रखकर हल्का गरम कीजिये, पैन यदि नानस्टिक नहीं है, तब पैन के ऊपर थोड़ा सा तेल लगाकर पिज्जा सेकने के लिये डालिये, और ढककर 2 मिनिट या पिज्जा के नीचे की ओर से हल्का ब्राउन होने तक सेक लीजिये. आग धीमी ही रखिये। अब पिज्जा को पलटिये, गैस एकदम धीमी कर दीजिये और पिज्जा के ऊपर टापिंग कीजिये. सबसे पहले पिज्जा के ऊपर सास की पतली सी लेयर लगाइये, और अब शिमला मिर्च और बेबी कार्न थोड़ी थोड़ी दूर पर लगा दीजिये. सब्जियों के ऊपर मोजेरिला चीज डाल दीजिये। अब पिज्जा को ढककर 5-6 मिनिट तक धीमी गैस पर सिकने दीजिये,चीज के मेल्ट होने और नीचे की ओर से पिज्जा बेस के ब्राउन होने तक सेक लीजिये. पिज्जा को हर 2 मिनिट में चैक करते रहिये। अब आपका पिज्जा बनकर तैयार है, पिज्जा के ऊपर हर्ब्स डाल दीजिये और काटिये. गरमा गरम पिज्जा सर्व कीजिये और खाइये.

प्याज, मिर्च, अदरक, टमाटर, आलू, गाजर को छोटे - छोटे टुकड़ों में काट कर अलग रख दें.
हीट तेल और चना दाल, उड़द दाल, सरसों के बीज और करी पत्ते जोड़ने. जब वे crackle शुरू करने के लिए, मूंगफली और काजू. तलना जब तक वे सुनहरे भूरे रंग की बारी.
आलू, गाजर, और 4-5 मिनट के लिए भून जोड़ें.
तो मिर्च, अदरक, प्याज, मटर और टमाटर जोड़ने.

Make a stiff dough using all the ingredients. It should be like a puri dough. Cover and keep aside for minimum 2 hours.
Heat a tawa on high. ( I reduced to medium high after a while since the electric stove heats up a lot, if using gas you have to keep it on high)
Make a golf sized ball of the dough.
Roll it to a round of about 1/4 inch thickness.
Using 1 pastry brush, brush some water on one side of the rolled dough.
Place the watered side of the roti on the taw. It will stick to the tawa. Brush water on the other side now.
Invert the Tawa now, such that the roti is now directly facing the burner/coil.
Cook the roti this way till, the roti drops off on its on. (It will drop off when it is cooked completely). Use your judgement here and be careful not to burn the roti.
Sometimes the roti drops off before being cooked completely, in that case just cook it on the tawa or directly on the grill till its done.
Remove from heat, brush with some ghee and serve immediately.

Mix all the ingredients first in a crumbly mixture.
Add warm water little by little and mix it in a soft dough.
Pinch a lemon size ball from the dough, dust it with some bajra flour and roll it into a desired sized circle. Remember, you won't be able to make a perfect circle because this dough is just of that nature.
Now, put this rolled roti on a hot griddle and let it cook on both sides till golden brown. 
There are 2 options here, you can either put some ghee while cooking the roti or add it on top while serving. (My son doesn't like to see ghee on top of his roti, so I prefer adding it while cooking itself so that he doesn't notice it :), sneaky mom)

Grinded Sugar 500 gram

  1. Put grinded Suji/sooji in a frying pan and heat it.  Stir well till golden brown.
  2. Put this golden brown Suji in  bowl and let it cool.
  3. Add grinded Sugar, Milk, Elachi, Jaifar to Suji and mix well.
  4. This mixture needs to be pressed firmly in the hands to make in balls. we can use either hot ghee or condense milk for rolling into balls.
  5. Put these ladoo in fridge and serve cold.
  • Note :  If using hot ghee, heat the ghee in little portion for using to make suji balls.
  • Note :  If you are using ghee the Sooji ladoo will be soft in texture and if using condense milk the texture will be hard.

Aam ka Achar Recipe

Aam ka achar banane ki Samagri:
Raw Mangoes - 2.175 cups (I would say 2 cups and about 1/4 cup more)
Mustard oil - 3 tbsp + 1 tsp (I did not have mustard at the time, so used olive oil instead and loved it, plus it is healthier)
Aam ka Achar banane ki Vidhi in Hindi:
Wash and towel dry whole green mangoes (without cutting them)
Cut them in desired shape, I cut mine in 1 inch cubes. Spread them on a paper or kitchen towel, keep them in sun for the entire day (so that any moisture remaining in them is gone and they dry up pretty well as then they suck up the spices nicely).
Meanwhile, mix the spices in a bowl (big enough for you to toss with mango pieces)
While mango pieces are dying, wash and thoroughly dry a big enough glass or porcelain jar as well.
Once the mango pieces have dried for a day, mix it with spices and store in the dried jar.
Add enough oil to drown the mango pieces in the jar.
Next day, put the jar in the sun for the rest of the day.
Bring in the jar in the evening and you can start enjoying it right then.
But, for a better taste, let it be like that soaking in spices and oil for 10-15 days. 
Don't forget to shake the jar well once a day (no need to keep in sun anymore).

Chilli - 500 grams
Garlic - 200 grams
Curry leaves - 1 packet (about 10 branches or 20 grams)
Salt - 100 grams
Mustard oil - 200 ml
Olive oil - 50 ml
Mustard seeds - 1 tablespoon
Fennel seeds - 3 tablespoons
Turmeric - 2 tablespoons
Chilli Flakes (for extra kick only) 4 tablespoons
pickle masala mix from indian store (Brands: MDH/ Mangal/ etc) - 100 grams

Grind the Chilli and Garlic in the food processor, keep fairly coarse.
Heat mustard oil in a big pan and when hot, add the mustard and fennel seeds. After half a minute, add the turmeric and curry leaves, closely followed by the chilli garlic mix. Cook for 2 mins and take off. Add the chilli flakes if you want extra hot, salt, and pickle mix and put in a dry and clean jar and put the olive oil on top to cover the pickle. It's ready to eat immediately but I give it at least 2 weeks to soften up.

Lemon - 6-7 (small)
Mustard seeds - 1 tsp
Methi seeds (fenugreek seeds) - 1/2 tsp (dry roast and make a powder)
Haldi powder - 1/4 tsp
Hing - a pinch
Red chilly powder - 2 tsps

  • Take 6-7 small lemons (The lemons look quite big in the picture but they are normal small lemons)
  • Wash the lemons nicely and cut 1 lemon into eight small pieces.
  • Put the lemon pieces in a vessel and add sufficient salt and mix nicely.
  • Now squeeze the juice of 2 whole lemons and mix nicely.
  • Keep the vessel with the cut lemons closed with a lid.
  • Allow the lemon with salt to remain for 5-6 days.
  • On the 7th day take a kadai pour little sesame oil and put mustard seeds.
  • After the mustard seeds crackle off the gas.
  • Add hing,red chilly powder,Haldi powder..
  • Dry roast the methi seeds and make a powder and add this powder.
  • Now again light the gas stove and add sufficient sesame oil to cover the lemon pieces.
  • Put the lemon pieces which were in salt for 5-6 days and stir nicely for 5 minutes.
  • Do not stir in oil with the stove on for a longer time.
  • After the lemon pieces have mixed nicely in the kadai remove from fire.
  • The Lemon pickle is ready to be had with rice and curd, any Upma or adai varieties.
  • Store the lemon pickle in an air tight container.

Gobhi aur Gaajar ka Achar Ingredients Below:
8 Cups Cauliflower (cut into small pieces)
4 Cups Carrots (cut into slices of 1” length)
20 Cloves of Garlic (finely crushed)
4" Ginger (grated from fine side of grater)
1 Cups Vinegar
3/4 Cup Jaggery or brown sugar
1/3 Cup Mustard Oil
1 tbsp Mustard seeds (coarsely ground)
2 tbsp Red Chili Powder 
4 tbsp Garam Masala (without Coriander seeds)
Salt to taste
Gobhi aur Gaajar ka Achar Recipe Preparation Method in Hindi (Method 1):
Boil Vinegar and Jaggery into a pan until all Jaggery is dissolved into Vinegar. Keep aside for few minutes.
Gobhi aur Gaajar ka Achar Recipe Preparation Method in Hindi (Method 2):
1. Boil water in big deep Pan. Add 1/2 tsp Salt.
2. Put Gobhi and Gaajar into boiling water and blanch 
    it for 1 minute.
3. Take it out on dry clean kitchen towel and keep aside 
    for few hours in sunlight until it becomes dry.
4. Heat Oil in big heavy Sauce Pan on medium high heat.
5. Add Garlic and Ginger, stir it until they change their 
    color into light brown.
6. Add coarsely ground Mustard Seeds and stir it for few 
    seconds.
7. Add Chili powder and Garam Masala , stir it for few 
    more seconds.  
8. Add Gobhi and Gaajar immediately. Stir it very carefully
    until all Masala is mixed up with Gobhi and Gaajar properly.
9. Add Salt and stir for 1 more minute, then turn
    off heat.
10. Add Vinegar and Jaggery mix liquid into Masala.
11. Mix it well and keep aside until it cools.

Serving 6-8 persons

Roast peanuts in a pan without any oil . Roast them light golden at medium flame.
In a Blender grind peanuts, green chillies, curry and coriander leaves with 1 cup of water. You may have to add more water as peanuts gets thicker as it grinds and make grinder difficult to operate.
In a pan heat oil add mustard seeds and fry it. When mustard seeds starts crackling add grounded peanut paste to it add salt and mix it well .
Cook it for 1-2 minutes at low flame.
Cool It down and serve it with your choice of any idli, dosa or any other dish of your choice.

Tamatar ki Chutney Recipe in Hindi

4 Tomatoes
1 1/2  tbsp Ginger garlic paste
1 tbsp Red chilli powder
1 tbsp Turmeric powder
2/4 Green chillies
4/6 Curry leaves
1 tbsp  Cumin seeds (Zeera)
1 tbsp  Black Mustard seeds(Rai)
Salt to taste
4 tbsp Oil
Tamatar Ki Chutney Preparation Method:
Tamatar Ki Chutney Banane ki Vidhi in Hindi:
In a large non-stick saucepan/Khadhai add oil at medium heat, Add cumin seeds, black mustard seeds & curry leaves fry for 30 seconds.
Then add tomatoes, ginger garlic paste, red chilli powder, turmeric powder,green chilli and mix well.
Now after a couple of minutes add salt,do not cook on a high heat,simmer heat and cover the pan leave till smooth.
At this stage there will be some liquid from the Tomato in the pan. You need to now  stir it till tomatoes gets smooth and mushy.
Then cover the pan let it until all the liquid evaporates,leave till done.
Remove from the heat.
