8 Cups Cauliflower (cut into small pieces)
4 Cups Carrots (cut into slices of 1” length)
20 Cloves of Garlic (finely crushed)
4" Ginger (grated from fine side of grater)
1 Cups Vinegar
3/4 Cup Jaggery or brown sugar
1/3 Cup Mustard Oil
1 tbsp Mustard seeds (coarsely ground)
2 tbsp Red Chili Powder
4 tbsp Garam Masala (without Coriander seeds)
Salt to taste

Gobhi aur Gaajar ka Achar Recipe Preparation Method in Hindi (Method 1):
Boil Vinegar and Jaggery into a pan until all Jaggery is dissolved into Vinegar. Keep aside for few minutes.

Gobhi aur Gaajar ka Achar Recipe Preparation Method in Hindi (Method 2):
1. Boil water in big deep Pan. Add 1/2 tsp Salt.
2. Put Gobhi and Gaajar into boiling water and blanch
it for 1 minute.
3. Take it out on dry clean kitchen towel and keep aside
for few hours in sunlight until it becomes dry.
4. Heat Oil in big heavy Sauce Pan on medium high heat.
5. Add Garlic and Ginger, stir it until they change their
color into light brown.
6. Add coarsely ground Mustard Seeds and stir it for few
seconds.
7. Add Chili powder and Garam Masala , stir it for few
more seconds.
8. Add Gobhi and Gaajar immediately. Stir it very carefully
until all Masala is mixed up with Gobhi and Gaajar properly.
9. Add Salt and stir for 1 more minute, then turn
off heat.
10. Add Vinegar and Jaggery mix liquid into Masala.
11. Mix it well and keep aside until it cools.
